It was becuase the Chain was cut. Jinta even said that most people took less than 72 hours but that was the maximum.
The problem is that it takes much more than 72 hrs to transform into a Hollow after death. Death causes the Chain of Fate to be cut.

Only thing I can think of is that the shaft itself is special in some way (how it was made, the location, or something else) and 'caused' the effect. Thus Jinta was talking about the effect on people in the pit.

The only other possible explanation is that it's triggered when an external force cuts the chain while the body is still alive, instead of the chain breaking naturally with the death of the body.

On a side note, the Chain of Fate is based off of an occult concept called the silver cord, which joins a person's physical and astral bodies. While the silver cord exists, the astral traveler is still alive, and can return to their body. Break it, and they either die, or are in permanent comas.

IIRC, in the manga, Urahara mentioned that the pit, called the Hole of Despair, contained a gas that accelerated the shortening/corrosion of the chain of fate that usually takes years to just under 72 hours with 72 being the max amount of time it took. I looked it up and Urahara mentioned it in chapter 62/Volume 8 Chapter 1.
