This kind of came up as a non-serious omake for one of my stories. Basic concept was that Ranma dies and Saffron resses. Sort of a FF thing with phoenix down reference. Thinking more seriously on it this is the idea I was imagining to start it.
Timeline wise it would be very shortly after Jusenkyo, first reason is that it puts Ranma in the Phoenix territory and the other will come up later. Ranma is pissed at Genma and they are apart, mostly because Ranma is about to make a rug out of him.
While out and about like when he ate the dragon whisker soup, Ranma comes across Saffron either being kidnapped by some shadowy anti-phoenix organization. (Which isn't all that unlikely considering the Phoenix are huge dicks) Musk possibly with some alternate backstory. Or Saffron just escaped to explore the outside world and came across some criminal group.
Saffron is 'killed' while Ranma tries to save the weird little kid while getting away and he's shocked to have the body turn into an egg so he takes it with on the escape. The egg hatches and Saffron imprints on Ranma leaving him to care for a baby and trying to figure out how that whole thing worked.
While successful in putting some distance the group catches up with Ranma and guns him down or maybe one of them is some superb martial artist and beats Ranma to death. Saffron was hidden enough that they leave to go look for the egg that must have been dropped off somewhere.
Baby Saffron is of course distressed about the loss of the one he imprinted on and through a convenient plot device, some of his feathers molt to induce the phoenix down affect. With the Jusenkyo connection it goes one step further and turns Ranma into an immortal phoenix like Saffron. (Though underpowered to start)
Curse remains in effect, whether or not both forms are phoenix will be authors choice.
From here I thought of two different paths. The first is that the Phoenix catch up to Ranma/Saffron and take them back to the mountain. After a real short time of figuring out that he's just going to be a royal slave to be their utilities, Ranma busts out to find Genma. (most likely with Saffron who's still a infant) This leads to probably returning to Japan while avoiding the Phoenix who are less than happy about losing what would amount to a constant provider.
The other option is that Ranma doesn't meet up with the Phoenix but ends up traveling all of the world after finding Genma. Who really just wants to go to Japan. This option could easily lead to large time skips with Ranma/Saffron alternating who's young/old or whether their age matches.
