Crawfish Rotini

Ingredients
4 Tablespoon(s) extra virgin olive oil
5 Pound(s) dry Rotini pasta (tri-color)
3â„4 Cup(s) crawfish fat
2 Pound(s) onions, finely chopped
1â„3 Cup(s) garlic, minced
3 Quart(s) heavy whipping cream
1 Cup(s) dry white wine
1 1â„2 Teaspoon(s) white pepper
1â„2 Pound(s) butter
1 Tablespoon(s) granulated onion powder
2 Pound(s) Louisiana Crawfish Tail Meat
1 Bunch(es) shallots, chopped
1â„4 Bunch(es) parsley, chopped
2 Cup(s) grated Romano cheese, devided
1 Tablespoon(s) Louisiana Crawfish Creole Seasoning
Steps
Over medium. heat add butter, onions, and garlic
Simmer until onions are clear for approximately 5 minutes
Add heavy cream and wine and increase heat to rolling boil
Add seasonings, crawfish fat, and tails
Return to a boil
Add shallots and pre-boiled pasta
Fold pasta in gently to coat
Add parsley and Romano cheese and serve with hot bread and salad
