Oh yeah. I see Peter as the kind of guy who doesn't really care much for style, but rather comfort. (kinda like myself) Jess... well... I hate to sound sexist (and to ankokudaishogun, it's not sexist if it's accurate) but I think her having a sense of style and being up to date with the trends, not just with clothing, but with superheroes as well, fits. Heck, I can see her having initial designs based off of heroes like Iron Man or Captain America initially (Star-Spangled Spiders anyone?). I also agree that she would be the driving force, before Ben gets killed, for the two of them to use their powers for fun-I mean good.

This works. Basically, it feels like Jess would want to use the powers for fun, while Peter, being sort of the responsible one, would want to try and figure out how to make money off their powers.

One thing that does occasionally bug me: Webbing. Granted he's very smart, but coming up with something like that on the fly just seems so convenient. Or if it was created by his parent's work, it's just convenient again that it would slot right into his theme. I'm so-so on the natural organic web-shooters, but by the same token, I like that Peter's smart enough to make his own web-fluid. So I'm suggesting sort of a half-way solution. Specifically during his study of his (and Jessica's) bodies, he notices some very odd enzymes and proteins in their saliva. Possibly some sort of undeveloped half-formed spinnerets in their bodies. These elements derived from his body provide the inspiration and possibly a catalyst to actually make the web-fluid. He can come up with the necessary work for the mechanical web-shooters, but the web-fluid itself is derived from his own biology, even if it doesn't quite come out ready to use.

I don't know if It were explained in any of the comics, but according to Wikipedia in the 90's Spider-Man Cartoon, it's explained that Peter once he got bitten "became subconsciously aware that a combination of certain enzymes would create a strong, sticky fluid reminiscent of a spider's webbing."

Edit: Found the Episode, where he says that. it's round the 15:00 mark.

If you're going with the Ultimate universe backstory, with the only change being that Richard and Mary Parker had twins instead, then I'm pretty sure that the formula for the webbing that Peter used was started by Richard and completed by Peter.

That is correct; it was mentioned in Ult. Spiderman #6 [Checked the issues I have to be sure], that Peter completed his father’s work on a "molecular adhesive", to make his webbing.

Also, reading back on the first few issues, while Peter did create the sweatshirt/ski mask wrestling outfit [With a mask that wholly covered his face], it was the wrestling promoter for obvious reasons [Cause Peter looked stupid] who gave him his Spiderman outfit albeit without the web pattern or the spider symbol on his chest, which he would later modify onto himself when he became a hero.

Perhaps the reason that the regular Spiderman design in this AU was not chosen by the two was that, perhaps either one of them realised after some thinking that the wrestling company and its promoters who provided the costume might realise that Spiderman = Wrestler = that Parker kid and put 2+2 together, if they went out in it.​

Those ideas could work, though I would suggest making their wrestling costumes unique (I highly doubt the wrestling costume came with a matching pair).

Now, how should each chapter progress story wise? Like Ch.1 - School trip + Spider Bite, Ch.2 - Home Life/Discovery of Powers, Ch.3 - start of Wrestling arc and so on and so forth.
