I've watched MonMusu, Overlord, Fate/UBM (and the original Fate), PS/G, Eva, Naruto, Outlaw Star, Sailor Moon, DBZ/GT/etc, Tenchi Muyo (WHY DID THEY FUCK UP THE NEW SERIES?), Highschool DXD, Love Hina, RIN: Daughters of Mnemosyne, Desert Punk, Armitage III-
Man, listing these gets hard and shows off how little otaku-cred I have...
I started watching Testament of Little Sister Devil- I'm surprised by how much lewder it is than even Highschool DXD was (Hell, it was even slightly more lewd (though less fetishized) than RIN: Daughters of Mnemosyne)
Keen.
I mentioned Cowboy Bebop already, but I'll reiterate that if you've not seen it yet. Definitely watch that.
I'll also add some more.
Trigun: A steampunk western that probably influenced Borderlands a lot.
Crunchyroll is getting Dragon Ball Super later this month. However, it's not getting it from episode one, but rather starting with the currently airing arc. You can catch up with most of it by watching the two DBS movies: Battle of the Gods and Revival of F. There's still another arc between that and what is currently happening, but anything important or relevant from that arc gets explained again well enough in the current arc that you should be able to keep up.
I expect the other episodes will show up later on. I suspect they're releasing them in batches to prevent the servers from melting down and killing their bandwidth when everyone tries to binge watch the show at once.
Season 1 of the new Voltron is pretty good and available on Netflix. It's only technically anime, but decent.
Amanchu is a fun slice of life with Yuri elements. It's about diving.
Dagashi Kashi: Is a cute slice of life thing that will teach you a lot about Japanese junk foods.
I'll list some movies as well that you should check out if you've not seen them. Great for when you don't really want to take the time for an entire series.
5 Centimeters Per Second
Children who chase lost voices
Colorful
These three are all really great dramas with superb animation.
Akira is a must and basically launched Cyberpunk as we know it today along with...
Ghost in the Shell. Avoid the 2.0 version, it's the Star Wars Special Edition of anime as all it does is add crappy CGI to the original.
However, Ghost in the Shell 2: Innocence is the sequel, and while not as good, it's still excellent.
Since I'm bringing those up, Ghost in the Shell Stand Alone Complex is a great series. Many say it's better than the movies. It's also it's own thing, and you don't need to have seen either movie to get into it. There's also a couple of movies tied into this series.
Ninja Scroll is a fantasy samurai thing, and very adult. It's not porn, but don't watch this with kids in the room.
Jin-Roh Wolf Brigade is a great military action thing.
Spriggain is another good action flick.
Summer Wars is another must see classic film.
Perfect Blue and Paprika are really great psychological thrillers. Perfect Blue was loosely adapted as a live action film called Black Swan.
The Tale of Princess Kaguya is worth seeing just for the visuals.
Red Line is another that is pure eye candy. It's about racing and all hand drawn, and it's amazing to look at.
The girl who leapt through time is pretty self explanatory.
Welcome to the Space Show: A group of kids rescue an alien dog that leads them to a galactic adventure.
Street Fighter II: The Movie: So so plot, but some of the best anime fight scenes ever created.
Then there's the usual suspects:
Princess Mononoke
Spirited Away
Naussica of the Valley of the Wind
Porco Rosso
Castle of Cagliostro
Grave of the Fireflies [Have some tissues on hand.]
Howl's Moving Castle
Tales of Earthsea
Also, the original Tenchi Muyo, Tenchi Muyo: Ryo Ohki, is getting four new episodes with the first supposedly being released at the end of November, and the others being released in three month intervals with the final episode being released at the end of August next year. It's supposedly going to add a definitive ending to the series and bringing the total number of episodes for the original OVA series up to 25 if you include the Mihoshi Special.
