According to the official timeline, podracing was at it's peak during the Boonta Eve Classic that Anakin won. However, as the war progressed, it's popularity declined. By the time ANH started, a combination of the loss of public appeal, being more thoroughly outlawed by the Empire, and most of the best races being arrested for criminal activities during the Clone Wars had all but killed the sport. Corresponding to this, revolutions in antigravity technology made
swoop racing the new thing. Luke wouldn't have been dreaming about podracing, but swoop racing. And he apparently
has experience racing swoops too, seeing how he roasted the asses of those Imperial Scouts in RotJ.
It would be interesting, perhaps, to see some speculative fanfiction where Luke, like his father before him, becomes an amazing racer. So amazing that someone
important, like a Grand Moff who happens to be on Tatooine for business,
notices him. That could go down some interesting paths.
