Actually, I think PB is Lawful Neutral. She's the absolute authority in the Candy Kingdom but because she's inherently a kind person she rules in what she believes is most beneficial to her people. She treads a very fine line with morality but I don't think we've seen her push past the grey area.
And like many mad scientists, she has trouble coping with her own mortality.
She used a potion to try and bring someone back to life (Who, apparently, she used to date), created zombies that she did cure, but kept parts to experiment on and caused another zombie outbreak.
She puts a Jellyfish and a Balloon in a teleporter, an act that many sci-fi shows say ends only in pain as living and non-living matter are forcibly fused like molecules in a blender and reassembled into a form that must result in a horribly painful but mercifully short life.
She gets cheese not by either buying it or making it like a normal person, but by putting a cow in a centrifuge to make the cheese inside the cow and making the poor thing force a solid out a place that is meant to release liquid, a horror probably more painful than any kidney stone.
She has a butler who not only personally knows death, but seems to crave human flesh as well.
I think she's just as devoid of morals as Marceline, but at least the vampire admits it.
And I just had a thought, if Ooo is a post-apocalyptic Earth, but things like videos and movies have stuck around...
Does that mean that the people of Ooo could be judging us, the pre-Mushroom War people, based on a show like, say, Jersey Shore?
I shudder in sorrow for our people...
